Barbecued Cabbage

This eye-popping technique is a favorite on the American barbecue circuit. The sight of a whole barbecued cabbage never fails to grab attention and it tastes as great as it looks. The cabbage here is stuffed with bacon and onions, anointed with butter and barbecue sauce, and grilled using the indirect method until it is tender enough to cut with a fork. Best of all, the preparation time is short, although you need to allow an hour or so for the cabbage on the grill. Thus, barbecued cabbage meets my three requirements for a truly great dish: it looks terrific, it tastes terrific, and it takes just a few minutes to prepare.

Ingredients

  • 4 tablespoons (1/2 stick) Unsalted Butter
  • 4 slices (1/4 pound; preferably atisanal) Bacon, cut crosswise into 1/4 inch slivers
  • 1 small Onion, finely chopped
  • 1 medium size Green Cabbage (about 2 pounds)
  • 1/4 cup Basic Barbecue Sauce, or your favorite commercial brand
  • Coarse Salt and Black Pepper
  • 2 cups wood chips, soaked for 1 hour in cold water to cover, then drained

Directions

  • Melt 1 tablespoon of the butter in a skillet over medium heat. Add the bacon and onion and cookuntil just beginning to brown, 3 to 5 minutes. Drain the bacon and onion in a strainer over a bowl and reserve the drippings. Crumple a piece of aluminum foil and shape it into a ring about 3 inches in diameter.
  • Cut the core out of the cabbage and discard. Cut the remaining butter into dice. Stir the barbecue sauce into the bacon and onion mixture. Prop the cabbage upright on the aluminum foil ring, cavity facing up. Place the bacon and onion mixture in the cavity and top with as many pieces of butter as will fit. Using a basting brush, paint the outside of the cabbage with bacon drippings (save any remaining bacon fat for basting pork chops or making baked beans). Season the cabbage lightly with salt and generously with pepper.
  • Set up the grill for indirect grilling and preheat to medium. If using a gas grill, place all the wood chips in a smoker box or in a smoker pouch and preheat on high until you see smoke, then reduce the heat to medium.
  • When ready to cook, place the cabbage on its aluminum foil ring in the center of the hot grate away from the heat. If using a charcoal grill, toss all the wood chips on the coals. Cover the grill.
  • Grill the cabbage until very tender (when done it will be easy to pierce with a skewer), 1 to 1 1/2 hours. If using a charcoal grill, you will need to add 12 fresh coals per side after 1 hour if the cabbage is not done. To serve, peel off any dried-out or charred outside leaves and discard. Cut the cabbage into wedges and serve.

Cowboys Expected To Sign Tryouts

IRVING, Texas – The Cowboys are expected to sign two workouts from the rookie minicamp, fullback Jamize Olawale and defensive end Ben Bass, as they approach the 90-man roster limit for training camp.

Olawale is a converted 230-pound receiver from North Texas who had eight catches in two seasons. Bass (6-5, 295) helped Texas A&M lead the nation with 51 sacks in 2011 and was primarily a rotation player for the Aggies.

Last week the Cowboys also claimed 2010 fourth-round pick Akwasi Owusu-Ansah (Jacksonville) and punter Jake Rogers (Tampa Bay) and released rookie free agent cornerback Troy Woolfolk.

Buffalo Baby Back Ribs

Ingredients
3 racks pork baby back ribs
1 lemon cut in half
2 packets (1.6 ounces each) buffalo wing mix
2 tsp garlic powder
2 tsp freshly ground black pepper
1 teaspoon or more cayenne
1 bottle (12-ounce) buffalo wing sauce
Blue cheese dressing
Celery sticks (optional)

Directions

Remove thin membrane from the back of ribs. Rub ribs with cut lemon; set aside.

In a small bowl combine buffalo wing mix garlic powder black pepper and cayenne. Sprinkle seasoning over ribs and pat in. Cover ribs with plastic wrap. Chill in refrigerator for 1 to 3 hours.

Soak 2 cups hickory wood chips in water for at least 1 hour. Set up grill for indirect cooking over medium heat. Let ribs stand at room temperature for 30 minutes.

Drain wood chips. Add some of the soaked wood chips to the smoke box if using a gas grill or place chips on hot coals if using charcoal. Place ribs on rib rack on hot grill over drip pan (or place ribs bone sides down directly on hot grill). Cover grill. Cook for 2 to 2 1/2 hours. Rotate ribs around rack every 30 minutes. If using charcoal add 10 briquettes and a handful of soaked wood chips to each pile of coals every hour. If using a gas grill add a handful of soaked wood chips to the smoke box every hour.

About 20 minutes before ribs are done remove ribs from rib rack and place meat sides down on grill. Generously brush with wing sauce; stack ribs over drip pan. Cover and cook for 10 minutes. Turn ribs; brush with additional wing sauce and restack. Cook 10 minutes more or until tender. Remove from grill; cut into portion sizes.

Serve hot with extra wing sauce blue cheese dressing and celery sticks (optional). Makes 4 servings

INDOOR METHOD: Prepare ribs as directed. Preheat oven to 350 degrees F. Place ribs bone sides down on a wire rack in a shallow roasting pan. Cover tightly with aluminum foil. Bake in oven for 1 hour. Remove ribs from oven and carefully drain fat from roasting pan. Continue baking ribs uncovered for 30 to 45 minutes more or until tender turning and brushing occasionally with wing sauce during the last 20 minutes of cooking. Serve as directed.

Amazing Chicken Marinade

Directions:

  1. In a large, non-reactive container, whisk together ingredients beginning with cider vinegar through salt.
  2. Then whisk in olive oil and pepper.
  3. Place chicken in the mixture.
  4. Cover and marinate chicken in the fridge 8 hours or overnight.
  5. Remove chicken from marinade just before you turn on your grill or broiler to let come up a few degrees.
  6. Discard marinade.
  7. Lightly oil your grill or broiler pan.
  8. Grill or broil about 10 minutes per side

Time to clean the barbecue

Generally, grills should be cleaned before each use, but at least once a year it should also get a thorough inspection and scrubbing, say the experts from Weber-Stephen.

According to their annual Weber Canadian Grillwatch Survey, about one-third of Canadians clean their grill only once or twice a year, even though 84 per cent are grilling once a week or more when the weather is good.

To get started, gather a steel grill brush, fine steel wool pads, mild dish soap, a sponge or dishcloth and a one-inch plastic utty knife. When the gas is off nd the grill is cold, you’re ready o go. Here are some cleaning ips from Naz Cavallaro, Weber’s rilling expert:

Clear the burner tubes of any blockages: using a stainless steel wire brush, brush the portholes in an up and down motion. Brushing lengthwise just pushes debris from one hole to another.? Clean the flavourizer bars: these heat distribution bars, which help prevent flare-ups, can be cleaned by turning the grill on high and letting the residue burn off.

Clean the warming racks: rub the racks gently with a soapy, fine steel wool pad and then rinse thoroughly.

Carefully scrape the inside of the grill: using a putty knife, push residue through the bottom hole. To deep clean the bottom tray from under the grill, use warm, soapy water and a fine steel wool pad.

Clean grease drippings on exterior surfaces by using mild, soapy water to wash down these drips.

Spicy Baby Back Ribs

Ingredients
4 pound baby back pork spareribs
1 tablespoon olive oil
1 large onion , chopped (about 1 cup)
1 can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup (Regular or Healthy Request®)
1/4 cup packed brown sugar
2 tablespoon cider vinegar
2 to 4 teaspoons hot pepper sauce

Directions

Heat the oven to 400°F. Line a large roasting pan with aluminum foil. Place the ribs into the pan and cover.

Bake for 45 minutes. Uncover the pan and pour off any fat.

Heat the oil in a 2-quart saucepan over medium heat. Add the onion and cook until it’s tender. Stir in the soup, brown sugar, vinegar and hot pepper sauce and heat to a boil. Reduce the heat to low and cook for 5 minutes or until the sauce is slightly thickened.

Pour the soup mixture over the ribs.

Bake, uncovered, for 30 minutes or until the ribs are fork-tender. Cut the ribs into serving-sized pieces. Return the ribs to the pan and toss to coat with the sauce.

Dallas Barbecue Brisket

Ingredients

1 (4 to 6-pound) brisket of beef, trimmed
1 teaspoon garlic, chopped
1/2 tablespoon freshly ground black pepper
1/2 tablespoon kosher salt
1 tablespoon olive oil
2 large onions, chopped very large
3 carrots, halved
1 stalk celery, cut into 5-inch slices
2 bay leaves
1 quart hot vegetable broth or water
Huckleberry BBQ Sauce, recipe follows

Directions

Husband:

Trim the heavy outside layer of fat on the brisket, leaving about a 1/4-inch of fat on the meat. Rub with garlic, pepper, and salt. Drizzle the brisket with the olive oil and rub into the meat.

Place the brisket over hot coals of charcoal or wood fire and sear well on both sides. Fat side up will flame up quickly and must be well tended.

To smoke the brisket, make a cold side and a hot side in the barbecue. Move all the coals to the right side, and put the brisket on the left side. Next, place some wood chips on a tin pan over the coals, and shut the barbecue lid.

The coals need to be very close to the pan so the wood chips just begin to smolder. If they catch fire sprinkle them with water.

After about 1 hour the wood will stop smoking and the brisket is ready to give to the “Wife.”

Wife:

Make a bed of the onions, carrots, and celery in a roasting pan or electric roaster, saving a small amount to put on top.

Place the brisket with fat side up on the bed of vegetables, and arrange the bay leaves on and around the brisket. Top the meat with the remaining vegetables.

Pour enough stock or water in the pan to cover the bottom 1 to 1 1/2 inches. Sprinkle with more salt and pepper. Cover and roast for 4 1/2 hours in a 350 degree F conventional oven, or for 4 hours at 350 degrees F in an electric roaster.

Remove from the oven, cover, and let it sit for a good hour before slicing. Serve with warm Huckleberry BBQ Sauce.

Huckleberry BBQ Sauce:

1 (28-ounce) can diced tomatoes with juice

1/2 ounce tomato paste

1 tablespoon apple cider vinegar

1 teaspoon balsamic vinegar

2 teaspoons Worcestershire sauce

1/2 cup brown sugar, firmly packed

1 teaspoon molasses

1 tablespoon huckleberry jam

1 teaspoon natural smoke

1 teaspoon onion powder

1 teaspoon yellow mustard

1 teaspoon fresh garlic, minced

1 teaspoon freshly ground black pepper

1 tablespoon kosher salt

In a medium saucepan bring the tomatoes, tomato paste, cider vinegar, balsamic vinegar, and Worcestershire sauce to a boil. Reduce heat and simmer for 10 minutes. Add the rest of the ingredients to the saucepan and return to a boil. Reduce the heat and simmer for another 10 minutes. Allow the sauce to cool.

Puree the sauce in a blender until smooth. The sauce should be loose with some chunkiness. Serve warm.

Yield: 4 to 6 servings

Prep Time: 15 minutes

Cook Time: 25 to 30 minutes

Barbecue Bacon Wrapped Mushrooms

Ingredients

1 (8-ounce) package large button mushrooms
1 pound package peppered bacon, room temperature, slices cut in 1/2
4 tablespoons barbecue sauce

Directions

Cut the stems off the mushrooms. Rinse briefly and dry them well with paper towels.

Wrap each mushroom with the bacon strip halves. Use 2 if the cap is not completely covered. The bacon will stick to the mushrooms so there is no need for toothpicks.

In a medium saute pan over medium-high heat, saute the bacon wrapped mushrooms until the bacon is golden brown. Just as the bacon begins to crisp up a bit, add the BBQ sauce and toss until coated. Serve immediately.

Grilled Shrimp with Grapefruit BBQ Sauce

Ingredients

1 cup rice, regular or instant
Cooking spray
3/4 cup grapefruit juice
1/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon olive oil
1 teaspoon liquid smoke
3 pounds large or jumbo shrimp, peeled and deveined
1/4 cup scallions, chopped

Directions

Cook rice according to package directions.

Over medium high heat, with cooking spray, heat a stove-top grill pan or griddle.

In a shallow dish, whisk together grapefruit juice, ketchup, mustard, sugar, chili powder, cumin, olive oil and liquid smoke. Add shrimp and toss to coat. Place shrimp on the grill and cook 2 minutes per side, or until bright pink and cooked through. Serve half of the shrimp over the rice and top with scallions. Reserve the remaining shrimp for po’ boy sandwiches, if desired.
